Cheesecake Pops

When summer rolls around, we can’t get enough of sweet frozen treats to make the hot weather more bearable. Our

 

banana pudding pops and Nutella pops are classics we turn to again and again, but these cheesecake pops are the staple no-bake treat we truly can’t get enough of. These creamy cheesecake pops are the perfect easy dessert to cool off with when you just can’t be bothered to make a homemade cheesecake from scratch. With strawberry pieces and a crushed graham cracker topping, these pops give you the same delicious flavors you’re craving, with way less effort.

Because of their long chill time, we highly recommend making these pops well in advance before you’re ready to enjoy them. Whip everything up the morning of (or night before), then freeze until solid, and enjoy! Craving another fruit in these cheesecake pops? No prob! Feel free to switch out the strawberries for your favorite cheesecake topping, from blueberries to raspberries to mango.

Ingredients

  • 2(8-oz.) blocks cream cheese
  • 1/4 c.sour cream
  • 3/4 c.powdered sugar
  • 1 tsp.pure vanilla extract
  • 1/4 tsp.kosher salt
  • 1 c.chopped strawberries
  • 1/4 c.crushed graham crackers
  • 15popsicle sticks

 

Directions

    1. Step 1

      In a large bowl using hand mixer, beat cream cheese, sour cream, powdered sugar, vanilla, and salt until smooth. Fold in strawberries.

    2. Step 2Spoon mixture into Dixie cups then sprinkle graham crackers on top.
    3. Step 3Insert a popsicle stick into the middle of each cheesecake cup.
    4. Step 4Freeze until the cheesecake mixture is solid. Remove from Dixie cups and serve immediately.
