Baked Vegan Mac and Cheese

  • 1 ½ Cups Italian Style Bread Crumbs
  • 1 Pound Whole Wheat Elbow Macaroni
  • 1 Cup Full Fat Coconut Milk
  • 8 Ounces Vegan Shredded Cheddar Cheese
  • 2 Teaspoons Garlic minced
  • 2 Teaspoons Sea Salt
  • 2 Teaspoons Freshly Ground Pepper

Instructions

  • Preheat the oven to 350°F. Cook the pasta based on the directions included with the box then drain.
  • In a saucepan, heat your coconut milk, garlic, salt, and pepper. Bring to a simmer and let cook for about a minute. This should take about 5 minutes total.
  • Add about half the shredded cheese to the warm coconut milk mixture and stir until melted.
  • In a large bowl, combine the pasta and cheese mixture and mix well.
  • Pour the pasta mixture into a 3-3.5-quart casserole dish and spread even. Top with the rest of the vegan shredded cheese and bread crumbs.
  • Bake for 15 minutes or until the cheese has fully melted on the top.
