Strawberry Cheesecake Pie

A slice of this six-ingredient pie is mandatory on a warm summer day. There’s no oven involved for this

no-bake dessert making it the perfect thing to cool down with and beat the summer heat. It’s sweet and simple and any pie that doesn’t include fruit is just wrong.

Ingredients

  • 1pre-made graham cracker crust
  • 3/4 c.heavy cream
  • 1 1/2blocks (12-oz.) cream cheese, softened
  • 1 c.powdered sugar
  • 1/2 c.strawberry preserves
  • 1/2 c.chopped strawberries, plus more for garnish

 

Directions

    1. Step 1

      In a medium bowl using a hand mixer or in the bowl of a stand mixer, beat heavy cream until stiff peaks form.

    2. Step 2In a large bowl, beat cream cheese and powdered sugar until smooth. Add strawberry preserves and beat until combined. Fold in strawberries, then fold in whipped cream until just incorporated.
    3. Step 3Pour filling into crust and refrigerate until well chilled, at least 4 hours.
    4. Step 4Garnish pie with more strawberries when ready to serve.
